Their milk goes to Organic Valley, which is a national, farmer-owned, farmer-operated co-op based in LaFarge, Wisconsin. Although the co-op is national, milk is sold regionally.

When Cortland Beer Company first opened its doors in 2010 all beers were sold on a to-go basis, and samples were available directly out of their brewing facility. In 2012 Cortland Beer Company made the commitment to become a farm brewery and use local ingredients to craft our products. As a farm brewery they are now allowed to serve delicious draughts and flights as wells as kegs, growlers and cans to go. They operate on a 20 barrel system and take pride in the fact that all of their tasty beers are brewed right here.

The farmers milk a small flock of crossbred dairy sheep selected to thrive on their native pastures. Northland's animals are never fed any grain or by-products -- they are 100% grass-fed. They use natural and homeopathic remedies to support herd health, and produce truly handmade sheep cheese on the farm, using only raw sheep milk from their animals. Northland produces a number of hard and soft cheeses, aged in their own cheese cave. In addition to sheep cheese, the farm grows and sells 100% grass-fed lamb and mutton, as well as tanned sheepskins. Mutton is processed by a USDA-certified, Animal Welfare Approved, Certified Organic butcher, and lamb is processed by a USDA-certified, Certified Organic butcher. Great care is taken to ensure that the animals are handled and processed humanely with minimal stress. The farm uses almost exclusively horse and mule power to plough snow, make hay, and perform other necessary tasks, with tractors used only a few days per year. Cheeses can be bought at the Local Food Market in Cortland, NY, the Finger Lakes Cider Houses at Good Lif Farm, and the Trumansburg Main Street Market, and meat and sheepskin are available by email request.
